Intense yellow colour. The nose is a blend of fresh, white, fleshy fruit and floral aromas with a hint of oak.

The palate is rich, round and full bodied with a delicately roasted edge and a long, creamy finish.

The name “L’EOLE” carries with it the essence of lightness, echoing the graceful touch of the wind. Eole, the god of the wind in Greek mythology, has lent his breath to our vineyard, transforming it into a place of beauty and finesse. The secret behind this transformation lies in the enchanting process of erosion, where the relentless wind, over the ages, has delicately eroded the sandstone beneath our vines. This erosion has left its mark, gifting us with sandy soils that have blended seamlessly with the rich clay beneath.

Soils : Siliceous shale depression.

Vinification

Manual harvest with sorting by plot. Destemming and pressing as close to harvest as possible.

Cold settling, and fermentation in new French oak barrels, followed by ageing on the lees in separate barrels for 4 months.

Winegrower’s advice

Serve chilled but not iced. Ideal temperature to maximise release of the aromas is around 12.c. Perfect as an aperitif with light “delicatessen,”  or a great partner to grilled scallops, or sweetbreads with butter.
