Soils : Siliceous shale depression.
Vinification
Selection of the oldest parcels of the estate. Harvested by hand, a traditional vinification grape variety by grape variety with daily pumping over, and a post-fermentation maceration of fifteen days.
Ageing: 12 months in a blend of barrels of different ages and origins, with regular stirring of the lees.
Winemaker’s advice
To be served between 16° and 19° with meats in sauces or nice grilled red meat. It can also be enjoyed with soft cheeses.
To be consumed between 3 and 6 years old.
