The Éole cuvée pays homage to the singular rocks sculpted by the wind that surround the Domaine and Rousset les Vignes.
2/3 of the wine is aged in oak barrels (1 x 500-liter barrel of 1 wine and 1 x 228-liter new barrel). This dry, fruity, round white is a delicate treat for the palate.

Soils : siliceous schist depression.
Harvested early in the morning to preserve freshness. Destemming and pressing as close as possible to the harvest.
Cold settling and fermentation in new barrels, followed by ageing on lees in 2-wine barrels for 6 months.
Serve chilled, but not iced, with a “catered” aperitif, but also with simple, noble products such as scallops a la plancha or buttered veal sweetbreads.
